This blog is a reflection on life after the diagnosis, on my personal experience coming to terms with Celiac disease.  I want to share how I've come to accept this new life, from the recipes that have been literal life-savers to the tips that I now can't live without!  It hasn't always been easy (and I won't sugar-coat it if it hasn't), but I've had alot of support from friends and family along the way.

I hope this blog helps everyone see that life on a gluten-free diet doesn't have to be boring, and a Celiac diagnosis is not a death sentence for your taste buds!  My mom is an amazingly talented cook and my father is a classically-trained baker.  (Oh, the irony, I know, that I can have anything I crave baked to order, but I can't eat any of it!)  Needless to say, I know I could eat only brown rice, steamed veggies, and roasted chicken for the rest of my life, and never have issues with gluten contamination, but that wouldn't be living to me.  I would survive, but I wouldn't be inspired or happy or passionate about life without cooking and eating everything.

If you are a Celiac, I hope you see that life does go on after you're diagnosed.  Most importantly, you're not alone in your fight to get all those pesky contaminants out of your life, or crazy for being paranoid about everything you put in your mouth.  If you're just curious about gluten-free eating or want to eat simpler, more wholesome foods, I hope you can find ideas and inspiration.
